the unusual ravioli for Unusual Panettone

Ec Comi here with the first recipe in cooperation with the Confectionery Loison and their new blog Unusual Panettone


 Come dice il titolo stesso si parla di panettone, visto non solo come protagonista indiscusso delle tavole di Natale, ma anche come co-protagonista sulle tavola tavola di tutti i giorni  insieme a pasta, carne e a tutto ciò che ci detta la fantasia.
Io ho pensato ad una rivisitazione dei classici tortelli di zucca dove il panettone classico con uvetta e canditi prende il posto di amaretti e mostarda.

TORTELLI DI ZUCCA E PANETTONE


Serves 2:

for the dough:
200 grams of flour 2 eggs
water if necessary
a pinch of salt

For the filling: 250 gr
pumpkin boiled in 100 grams of steam
Panettone
salt and pepper

For the sauce: 1 tablespoon of butter
1 tablespoon oil
70 g bacon, cut into match
pepper rosemary

Prepare the dough: Mix flour with eggs and a pinch of salt (add water if needed requirements) and work on floured pastry board always well for about ten minutes.
Wrap in a sheet of plastic wrap and let stand.

Prepare the filling:
crush with a fork and chop the pumpkin cake (I use the crescent). In a glass bowl mix the two ingredients well, season with salt and pepper to taste. Cover with foil and let stand in refrigerator.

take the dough and roll out with the appropriate machine to the last mark (must be very thin) or by hand by spreading as much as possible.
Take the filling from refrigerator and place on a strip of pasta in balls the size of a walnut far in well, cover with another pasta and adhere well around the filling to squeeze out the air. Cut with a serrated pasta bowl or on a wheel. Continue until all the ingredients.

Prepare the dressing: in a large pan add the oil and butter, heat and add bacon and cook a few minutes (add salt if necessary, but in my opinion is not the case)

Cook the ravioli in boiling salted water, drain and cook them (without turning) in the prepared dressing trirato adding rosemary and freshly ground pepper.

Serve immediately hot.


What can I say, we liked: the filling with a very sweet flavor panettone was well scontrastato predominant flavor from the bacon. Try it!
